Creole Country Sausage supplies our Cajun charcuterie, from alligator and andouille sausage to tasso and hogshead cheese. The company was founded over 30 years ago by Mary Fabiola “Fab” Schmitt and her husband Frederick “Ricker” Schmitt in Mid-City, New Orleans.

 

Today, it is a major supplier of quality sausage for a dizzying variety of Louisiana restaurants, hotels and sports venues.
